Get a pressure cooker and you can skip the soaking part. I bought an electric one a while back and love it. Much simpler than stove top pressure cookers. I'll check it out. Most of the indoors cooking my wife does and she's damn good so I just observe from a distance lol. Same with me. I do a few things inside, like sauce and sausage, but most of my cooking is on the grill. Also pressure cookers scare me. lol.

playing thunderbird hills & bunker hill this Friday & Saturday. can't wait, I've been working like a dog for the past 2 months and getting out and playing has me excited. vacation starts on sunday and bringing the clubs down to salt fork is something I've looked forward to. anybody play the salt fork track?

Push a few buttons and walk away. Just finished making meat sauce with it. Used bone in pork chops. Falling off of the bone after ~40 minutes of cook time. Yum.

Voodoo, i'm smoking a big fat brisket tomorrow but not eating it until Sunday. You ever cook one in advance? If so, do you have and recomendations on how to reheat without making tough or soggy?

Fucking Tapatalk is screwed up.
Re: Brisket. I slice it and keep it in the mopping sauce or juices from smoking it. Typically I heat it up in the oven at low or warm or whatever setting you have. Ours has a warm setting. I've never had it dry out that way.

First kind of chilly morning here (high 50's). Hot air balloons are out. Zucchini bread in the break room. Starting to feel like fall in NM. So going out for pho 🍲 at lunch was a home run choice.

Going back to basics today.
Deep frying some FRESH chicken wings, dumping them in sauce (Frank's red hot, melted butter, splash of Worcestershire sauce, sprinkle of garlic powder concoction)
Served w/ my garden cucumbers slices and some ranch dressing.
The BLT's have been amazing with my garden tomatoes. God I hate it that they're dying out...

Bttb, I found a new place for pho that I think is close to your place of employment. A place called Papaya Salad on the corner of State and Bath? In the plaza with Hamburger Station and On Tap. The pho is average, not as good as the place on exchange but it gets the job done.

To this day the beef, chicken and pork fried rice from those food trucks in Okinawa were the best I've ever had. We called them roach coaches but they had damn good food.
